14 Ingredients

  • 500grams vegan 'steak', sliced
  • 500grams vegan pasta, cooked
  • 4tablespoons vegan butter
  • 300grams mushrooms, brown mushrooms sliced
  • 200grams butternut squash, peeled and cubed
  • 1/4 cup vegetable stock
  • 2 cups vegan cream
  • 4 medium shallots, sliced
  • 4 cloves garlic, peeled and chopped
  • 2teaspoons dijon mustard
  • 2tablespoons paprika
  • 1 pinch salt
  • 1teaspoons cracked black pepper
  • 2-plus 4 extra tsp cup white wine

Description

A variation on a classic. Smokey flavour with a rich and textured sauce.

Method

Step 1 of 4

Fry the cubed butternut squash and plant based meat strips on a non stick pan with the garlic and butter for 3 minutes each side on a medium heat.

Step 2 of 4

Add the shallots and mushrooms the the pan for 6 minutes while tossing. Add the wine, herbs and spices to the pan and fry for a further 2 minutes.

Step 3 of 4

Add the vegetable stock and and vegan cream and continue to cook for 3 minutes while stirring to reduce the sauce.

Step 4 of 4

Cook the pasta in a seperate pot as per pack instructions and then drain fully. Add the cooked pasta to the pan and add the steak strips also and cook for 3 minutes before serving.
