- 1 small red onion
- 2 rashers middle bacon, diced
- 1 cup shredded tasty cheese
- 1/2 cup self-raising flour
- 1/2 bunch parsley, leaves picked, chopped
- 1 small zucchini, grated
- 1/2 cup frozen corn
- 4 eggs, lightly beaten
- 1 1/2 cups milk
Description
No crust? No problem. This flavour-packed quiche makes the most of protein-rich eggs, fresh and frozen veg, and bacon for a breakfast hit you'll be making on repeat.

Step 1 of 2
Preheat oven to 200°C/180°C fan-forced. Grease a 5cm-deep, 25cm top, 20.5cm base round pie dish. Thinly slice half of the onion into rounds, then finely chop remaining onion. Combine chopped onion, bacon, cheese, flour and three-quarters of the parsley in a large bowl. Squeeze out excess moisture from zucchini. Add zucchini and corn to mixture, then fold to combine.

Add egg and milk to mixture. Season with freshly cracked black pepper. Stir until well combined. Pour egg mixture into pie dish. Arrange sliced onion on top. Bake for 45-50 minutes or until quiche is golden and set, covering with foil if overbrowning. Cool for 30 minutes. Sprinkle with remaining parsley. Cut into wedges. Serve.
