  • 3teaspoons Woolworths Moroccan seasoning
  • 8 Woolworth RSPCA Approved bulk chicken drumsticks
  • 1 1/2tablespoons extra virgin olive oil
  • 1 brown onion, finely chopped
  • 1 clove garlic, finely chopped
  • 1/2 cube chicken stock
  • 1 cup Woolworths long-grain rice
  • 1/2 cup Woolworths frozen peas
  • 1/4 bunch coriander, sprigs picked
  • 1/2 cup Woolworths Greek-style natural yoghurt

Description

Win the weeknight with this one-pan chicken and rice dish that's simple, colourful and sure to please a crowd. Bright peas and creamy yoghurt add freshness and flair!

Method

Step 1 of 3

Sprinkle 1 tsp seasoning over chicken. Heat 2 tsp oil in a large deep frying pan over medium-high heat. Add chicken and cook, turning once, for 6 minutes or until golden-brown. Transfer to a plate.

Step 2 of 3

Heat remaining oil in the frying pan over medium heat. Add onion and garlic and cook, stirring often, for 2 minutes or until soft.

Step 3 of 3

Meanwhile, dissolve stock cube in 1½ cups boiling water. Add rice and remaining seasoning to onion. Stir until well combined. Add stock mixture to rice mixture and stir until well combined. Place chicken pieces evenly over rice mixture. Reduce heat to low. Cover and cook for 25 minutes. Uncover and scatter peas over top. Cover and cook for a further 5 minutes. Remove from oven. Top with coriander and serve with yoghurt.
