Description
A simple and delicious meal using leftover spaghetti bolognese sauce.
Method
Step 1 of 3
Wash zucchini and cut the ends off. Halve longways and scoop out the seeds. Spray the halves with olive oil and sprinkle with dried Italian herbs. Bake in the oven at 180 until the zucchini halves have softened. About 20 minutes.
Step 2 of 3
Mix 1 cup of cold, cooked rice into the spaghetti bolognese sauce and stir it through. This will help to thicken the sauce as well as give it more bulk. I used brown rice but any rice is great. Remove the zucchini halves from the oven and fill them with cold, leftover spaghetti bolognese sauce. Top each half with a small handful of woolies Italian cheese mix. Bake in the oven at 180 for about 30 minutes or until the cheese is golden brown.
Step 3 of 3
Leave to cool/set for about 10 minutes before serving.
