  • 400grams Macro Organic snacking tomatoes
  • 250grams Macro Organic zucchini, sliced
  • 1/2 cup Macro Organic Kalamata olives, drained, pitted, halved
  • 2 Macro Organic garlic cloves, crushed
  • 2tablespoons Macro Organic Spanish extra virgin olive oil
  • 250grams Macro Organic tomato, basil & garlic chunky pasta sauce
  • 1 cup Macro Organic wholemeal spirals
  • 80grams Macro Organic cheddar, finely grated
  • 1/2 bunch Macro Organic continental parsley leaves, leaves picked

Description

Looking for a simple pasta recipe? This vegetable pasta dish is the ultimate weeknight dinner and perfect for using up excess fresh vegies.

Method

Step 1 of 4

Preheat oven to 220°C/200°C fan-forced.

Step 2 of 4

Place tomatoes, zucchini, olives and garlic in a baking dish. Drizzle with oil and season with pepper. Toss to combine. Bake for 25 minutes or until tomatoes start to colour and have softened. Add sauce and stir to combine. Bake for a further 5 minutes or until sauce is heated through.

Step 3 of 4

Meanwhile, cook pasta according to packet instructions. Drain, reserving 1/4 cup cooking liquid.

Step 4 of 4

Transfer vegetable mixture to a serving dish. Add pasta, cooking liquid and half the cheese. Toss gently to combine. Top with parsley and remaining cheese. Serve.
