Icing
- 100grams unsalted butter
- 1 cup icing sugar
- 2tablespoons cocoa (optional)
- 50grams shredded coconut (optional, for decoration)
- 1/2teaspoons almond extract (optional)
- 1 1/3 cups self raising flour
- 1tablespoons cocoa
- 1 cup weet-bix, crushed
- 1 cup desiccated coconut
- 1/2 cup sugar
- 220grams unsalted butter
- 2tablespoons golden syrup
- 1teaspoons vanilla
Description
A lovely slice to have in the morning or afternoon with a cup of tea.
Method
Step 1 of 7
Gather all ingredients together. Preheat oven to 160 degrees fan. Grease and line a slice tray.
Step 2 of 7
Melt butter and syrup in a small saucepan over low heat until butter is melted or can melt in the microwave. Set aside to cool. Once cooled add vanilla and mix well.

Sift flour and cocoa into a large bowl, add Weet Bix, coconut and sugar. Mix well to combine.

Add wet ingredients to dry ingredients and mix well.
Step 5 of 7
Press mixture into a greased and lined slice tray. Bake for 20 minutes or until skewer comes out clean. Different Ovens have differing cooking times.

Cool on a wire rack, ice when cooled.
Step 7 of 7
Icing: In a medium bowl, beat butter until pale, carefully add icing sugar, cocoa if using, almond extract if using, mix well. Ice and add your preferred decorations.
