These blondies have the delicious flavours of carrot cake in a lighter bar.
Method
Step 1 of 3
Pre-heat the oven to 180°C/160°C fan-forced. Line a square baking dish with parchment paper.
Step 2 of 3
In a large bowl mix the peanut butter, honey, egg, vanilla, baking soda and cinnamon until smooth. Fold in the grated carrot and chopped pecans.
Step 3 of 3
Pour the batter into the baking dish and bake for 25 minutes, until a skewer comes out clean. Allow to cool completely before slicing into 16 blondies.
