Lemon Icing
  • 1 1/2 cup icing mixture
  • 1tablespoons unsalted butter
  • 1tablespoons lemon, zest
  • 2tablespoons lemon, juice
  • 1tablespoons water, boiling
  • 250grams unsalted butter, very soft
  • 1/2 cup brown sugar
  • 1/2 cup caster sugar
  • 2 eggs, room temp
  • 2teaspoons vanilla
  • 1 1/2 cup SR flour, sifted
  • 1 cup rolled oats

Description

A delicious slice with the added goodness of rolled oats, topped with a Lemony Icing.

A delicious hint of lemon that partners well with a cup of Tea.

Method

Step 1 of 7

Gather all ingredients together. Preheat oven to 160°C fan, grease and line a Lamington tray.

Step 2 of 7

Into a large bowl add butter, eggs, both sugars and vanilla. Beat until light and fluffy (about 3-4 minutes), add the sifted flour and rolled oats, beat for a further 1 minute or until well combined.

Spoon mixture into lamington tray and smooth the top.

Step 4 of 7

Bake for 30-35 minutes or until a skewer comes out clean. Cool completely on wire rack. When completely cold, apply icing.

Icing Instructions Into a small bowl add all the icing ingredients and mix well.

Step 6 of 7

With the lemon zest in the icing, I don't add any additional decorations. Slice can be cut to whatever size you desire. Enjoy.
