- 1 sheet frozen puff pastry, partially thawed
- 125grams punnet blackberries
- 1/4 punnet thyme, leaves picked
- 1/2teaspoons white condiment
- 200grams wheel triple cream brie
- 1 free range egg, lightly beaten
- 1teaspoons honey
- 75grams cranberry & pumkin seed crackers, to serve
Description
Gooey, creamy brie pairs decadently with blackberries and thyme in this too-easy (and moreish!) snack hack.
Instruction tip
Cooking tip:White condiment is also known as white balsamic vinegar. You can also substitute with regular balsamic vinegar.
Method
Step 1 of 2
Place pastry on a flat surface. Cut 4 blackberries in half lengthways. Arrange halved blackberries and 1/4 tsp thyme leaves in a 9cm circle in the centre of the pastry sheet and drizzle with white condiment. Top with brie. Fold pastry over brie to enclose, trimming excess pastry, if necessary. Place seam-side down on a plate lined with baking paper. Gently score pastry in a crosshatch pattern. Brush with egg and season well. Refrigerate for 20 minutes to chill.

Lightly grease an air-fryer basket. Preheat air fryer to 180°C for 3 minutes. Place brie in air-fryer basket. Bake for 15 minutes or until golden. Remove from the air fryer and stand for 2 minutes. Top with remaining thyme and blackberries and drizzle with honey. Serve with crackers.
