- 2 eggs, lightly beaten
- 2tablespoons plain flour
- 1/2 cup panko breadcrumbs
- 50grams parmesan cheese, finely grated
- 1teaspoons smoked paprika
- 300grams green beans, trimmed
- 5milliliter extra virgin olive oil cooking spray
- 1/2 cup Greek-style natural yoghurt
- 1 clove garlic, crushed
- 1 lemon, half juiced, half cut into wedges
- 1/2teaspoons chilli flakes
Description
You'll reach your veggie intake with these crunchy, easy-to-eat green-bean fries, served with a bright yoghurt dip.
Instruction tip
Tip:You can also cook these in the oven. Spread beans in a single layer on two large baking trays lined with baking paper. Spray with oil. Bake at 220°C/200°C fan-forced for 7 minutes, then flip, spray with oil and bake for a further 5 minutes or until golden.
Method
Step 1 of 3
Preheat air-fryer to 200°C. Place egg and flour in separate shallow bowls. Add breadcrumbs, parmesan and paprika to a third shallow dish. Season with pepper. Mix to combine.

Working in batches, toss beans in flour, then egg, then breadcrumb mixture. Cook in batches, in a single layer in air-fryer basket. Spray with oil. Cook for 7 minutes, then turn beans, spray with oil and bake for a further 5 minutes or until golden and crisp.

Meanwhile, combine yoghurt, garlic and lemon juice in a small bowl. Sprinkle bean fries with chilli flakes and serve with yoghurt dipping sauce and lemon wedges.
