  • 2 green apples, cored and cut into chunks
  • 2 red capsicum, cut into pieces
  • 2tablespoons mint, chopped (plus whole leaves, to serve)
  • Lebanese bread (to serve)
  • 2tablespoons lemon juice
  • 1/2 cup white wine
  • green salad (to serve)
  • garlic aioli (to serve)
  • 600grams pork fillet, cut into cubes
  • 1/4 cup olive oil
  • 2tablespoons oregano, chopped
  • 2 garlic cloves, crushed

Method

Step 1 of 4

Combine wine, garlic, herbs, lemon juice and olive oil in a bowl. Add pork and mix well to combine. Cover and place in fridge to marinate for 1 hour.

Step 2 of 4

Thread pork alternately with apple and capsicum onto skewers.

Step 3 of 4

Heat a frying pan or chargrill over medium-high heat. Cook skewers in batches for 3 minutes each side or until pork is cooked and tender.

Step 4 of 4

Place pork skewers on a platter, scatter with mint leaves and serve with salad, Lebanese bread and aioli (see tip).
