- 2 green apples, cored and cut into chunks
- 2 red capsicum, cut into pieces
- 2tablespoons mint, chopped (plus whole leaves, to serve)
- Lebanese bread (to serve)
- 2tablespoons lemon juice
- 1/2 cup white wine
- green salad (to serve)
- garlic aioli (to serve)
- 600grams pork fillet, cut into cubes
- 1/4 cup olive oil
- 2tablespoons oregano, chopped
- 2 garlic cloves, crushed
Method
Step 1 of 4
Combine wine, garlic, herbs, lemon juice and olive oil in a bowl. Add pork and mix well to combine. Cover and place in fridge to marinate for 1 hour.

Thread pork alternately with apple and capsicum onto skewers.
Step 3 of 4
Heat a frying pan or chargrill over medium-high heat. Cook skewers in batches for 3 minutes each side or until pork is cooked and tender.
Step 4 of 4
Place pork skewers on a platter, scatter with mint leaves and serve with salad, Lebanese bread and aioli (see tip).
