  • 1 clove garlic, crushed
  • 2tablespoons white sugar
  • 500grams cooked king prawns
  • 2tablespoons fish sauce
  • 2 long red chillis
  • 1/2 cup coriander leaves
  • 1 Lebanese cucumber
  • 250grams grape tomatoes
  • 1 French shallot
  • 2 kaffir lime leaves
  • 2 lime rind and juiced
  • 60grams baby rocket
  • 2tablespoons peanuts

Description

This vibrant Vietnamese prawn salad is fresh and flavoursome, with crunchy veg, a fragrant dressing and a pinch of spice.

Method

Step 1 of 3

Combine fish sauce and sugar in a shallow bowl and stir to dissolve sugar. Add lime rind, juice, garlic, chilli and kaffir lime leaves. Add prawns and toss well. Cover and refrigerate for 15 minutes.

Step 2 of 3

Meanwhile, halve cucumber lengthways and scoop out seeds with a teaspoon. Slice on an angle.

Step 3 of 3

Combine rocket, cucumber, tomato, shallot and coriander on a platter. Add prawns and drizzle over marinade. Top with peanuts. Serve.
