  • 300grams cooked tiger prawns, peeled, tails intact
  • 1teaspoons sugar
  • 600grams ripe tomatoes, roughly chopped
  • 1 long red chilli, deseeded sliced
  • 1 red onion, sliced
  • 2tablespoons flat-leaf parsley, chopped
  • tomato roma red, each
  • 1 lime fresh, each
  • 2tablespoons red wine vinegar
  • 1 lemon, cut into wedges (to serve)
  • 1 chorizo, sliced
  • 125grams feta, crumbled
  • 2tablespoons olive oil
  • 2 clove garlic, crushed

Method

Step 1 of 4

Preheat grill to high.

Step 2 of 4

Heat 1 tbs oil in a large ovenproof dish over medium heat. Add onion, chorizo, garlic and chilli, and cook for 3 minutes or until soft.

Step 3 of 4

Add tomato, vinegar and sugar, and cook, stirring occasionally, for 5 minutes or until tomato has started to soften. Gently stir in prawns. Season with salt and pepper then sprinkle with feta.

Step 4 of 4

Drizzle with remaining oil, transfer to oven, and grill for 5-8 minutes or until feta is golden. Sprinkle with parsley. Serve with lemon.
