  • 20grams butter
  • 1teaspoons fresh ginger, grated
  • 1 roast chicken
  • 1/4 cup honey
  • 4 corn cobettes
  • 500grams julienne carrots

Step 1 of 8

Remove chicken from outer plastic bag. Place chicken into a shallow microwave safe dish with seam facing up. Cook chicken for 30 minutes on medium. The microwave bag will start to split open along the seam, this is due to the build up of steam and is normal. Continue to cook for a further 15 minutes on medium. remove from microwave and pierce the thickest part of the thigh with a skewer. If the juices run clear, then the chicken is ready to eat. If the juices are pink, continue to cook in 5 minute bursts on medium and retest.

Allow to stand for 5 minutes. Drain juices and remove from plastic wrapping. Stand for 5 minutes before carving.

Meanwhile, bring a medium saucepan of water to the boil. Add corn cobbettes and return to the boil. Simmer for 5 minutes or until heated through.

Remove with tongs and place in a bowl, cover to keep warm.

Add carrots to boiling water. Return to the boil and simmer for 2 minutes or until heated through. Drain.

Return saucepan to heat.

Add butter to pan. When sizzling, add carrots, honey and ginger. Stir to coat. Cook for 2-3 minutes.

Step 8 of 8

Serve with chicken and corn.
