  • 1L mint chocolate cookie ice-cream
  • 1/4 cup unsalted butter (melted)
  • 4 burrito tortillas
  • 200grams dark chocolate (melted)
  • sprinkles (to decorate)
  • cup brown sugar

Method

Step 1 of 3

Preheat oven to 180°C. Line a baking tray with baking paper. Loosely roll several lengths of aluminium foil into 2 long logs to make taco shell moulds, then place on tray.

Step 2 of 3

Brush both sides of tortillas with melted butter, then sprinkle sugar over both sides. Drape tortillas over moulds to create a taco shell shape, then bake for 12 minutes or until golden and crisp. Remove from oven and set aside for 5 minutes or until cooled completely.

Step 3 of 3

Using the back of a spoon, spread chocolate onto edges of tacos to create a 2cm chocolate border. Decorate with sprinkles, then refrigerate for 5 minutes to allow chocolate to set. Fill tacos with scoops of ice-cream and drizzle over remaining chocolate. Serve immediately.
