  • 1/2 bunch mint, leaves picked, roughly chopped
  • 2 lemons, zested, juiced
  • 800grams seedless watermelon, rind removed, roughly chopped
  • 250grams Macro organic frozen strawberries

Description

Granita, anyone? Whip up this refreshing and easy dessert recipe whenever the mood strikes. Made with sweet and juicy watermelon, it's sure to be a hit.

Method

Step 1 of 3

Place coconut water and sugar in a small saucepan. Stir over low heat for 3 minutes or until sugar has dissolved. Add mint and zest, and cook, stirring occasionally, for 2 minutes or until syrup is infused. Set aside for 1 hour to cool. Strain and discard solids.

Step 2 of 3

Place lemon juice, watermelon and strawberries in a food processor and process for 1 minute or until smooth and combined. Add cooled syrup and process briefly to combine.

Step 3 of 3

Pour mixture in a 20 x 30cm (3cm deep) metal tray. Freeze for 2 hours or until just starting to freeze around the edges. Using a fork, scrape frozen mixture into centre. Freeze for 1 hour. Repeat process twice or until all granita is scraped. Divide granita among serving glasses and serve.
