  • 200grams thin rice stick noodles
  • 1 Lebanese cucumber
  • 2packets little gem lettuce, leaves separated
  • 1/2 bunch coriander, leaves picked
  • 1/4 cup Vietnamese salad dressing
  • 1 long red chilli, thinly sliced
  • 1tablespoons fried shallots, to serve

Description

Combine thin rice stick noodles, salad, chilli, coriander and fried shallots, then toss with a delicious Vietnamese dressing for a quick and easy salad.

Method

Step 1 of 3

Using the julienne cutter, cut carrot into matchsticks. Place sugar and vinegar in a bowl. Stir until sugar has dissolved. Add carrot and stir to coat. Set aside.

Step 2 of 3

Cook noodles according to packet instructions. Drain and refresh under cold water.

Step 3 of 3

Using the mandoline slicer, slice cucumber into thin rounds. Drain carrot mixture. Arrange lettuce and noodles on 4 serving plates. Top with cucumber, carrot and coriander. Drizzle with dressing and sprinkle with chilli and fried shallots. Serve.
