  • 350grams turkey meatballs, lean
  • 125grams red cabbage, shredded
  • 1 large carrot, peeled and sliced into ribbons
  • 3tablespoons lime juice
  • 4 spring onions, finely sliced
  • 3tablespoons soy sauce, reduced salt
  • 3tablespoons sesame oil, divided
  • 1tablespoons ginger, fresh, grated
  • 2tablespoons mayonnaise, light
  • 2 medium baguettes

Description

These lightened up banh mi sandwiches are packed with quick pickled veggies and flavour.

Method

Step 1 of 4

Toss the cabbage and carrot in lime juice in a large bowl and set aside for 15-20 minutes.

Step 2 of 4

Heat half of the oil in a large pan on medium high heat and add meatballs. Cook for 7-8 minutes until browned and cooked through.

Step 3 of 4

Whisk the soy sauce, ginger and remaining sesame oil together in a large bowl, stir in the spring onions and cooked meatballs and toss to coat.

Step 4 of 4

Cut each baguette in half and slice open lengthways. Spread with mayonnaise, add the meatball and spring onion mix, top with quick pickled vegetables and serve.
