  • 1teaspoons sugar
  • 1/2 small carrot, shredded
  • 1 red chilli, chopped (optional)
  • 1/2 small cucumber, deseeded and sliced
  • 2 spring onions, sliced lengthways
  • 1 small chicken breast fillet
  • 2 baby cos lettuce, torn
  • 1 lime juiced
  • 1teaspoons olive oil
  • 1 crusty baguette

Method

Step 1 of 3

Heat a frying pan over medium-high heat. Brush chicken with oil and season. Cook for 4-5 minutes per side or until cooked through. Set aside to cool. Shred.

Step 2 of 3

Combine lime juice, sugar and chilli in a bowl, stirring until sugar is dissolved. Add carrot, cucumber and spring onion. Drain vegetables.

Step 3 of 3

Split bread roll down the middle. Fill with lettuce, shredded chicken and vegetables. Wrap well.
