- 270grams dried soba noodles
- 1/3 cup cashew spread
- 1tablespoons sesame oil
- 2tablespoons soy sauce
- 2 cloves garlic, crushed
- 1 piece ginger, 3cm, finely grated
- 1/2teaspoons dried chilli flakes
- 180grams baby leaves & beetroot
- 1/4 red cabbage, finely shredded
- 1/2 bunch choy sum, leaves separated
- 1 cup unsalted cashews
- 2tablespoons sesame seeds, toasted
Description
Serve this easy soba noodle salad with chilli and cashew dressing on a hot summer's day for a refreshing flavour burst.
Method
Step 1 of 3
Cook noodles in a large pan of boiling water for 3 minutes or until just tender. Drain and refresh under cold water.
Step 2 of 3
Whisk cashew spread, 1/4 cup warm water, oil, soy sauce, garlic, ginger and chilli flakes in a small bowl until combined.
Step 3 of 3
Place noodles and half of the dressing in a large bowl. Add the salad leaves and cabbage, then toss to combine. Arrange choy sum leaves in bowls. Top with noodle mixture. Sprinkle with cashew nuts and sesame seeds. Serve with remaining dressing.
