Peanut Dipping Sauce
- 1/3 cup crunchy peanut butter
- 1/4 cup light soy sauce
- 1 lime juiced
- 1tablespoons maple syrup
- 1tablespoons vegetable oil
- 200grams honey soy tofu
- 12 sheets 22cm dried rice paper
- 2 handfuls oakleaf lettuce
- 1/4 small red cabbage
- 2 carrots
- 1 bunch mint
- 2tablespoons unsalted roasted peanuts
Description
Fun to make and even more fun to eat! Make these vegetarian rice paper rolls with tofu and peanut sauce for a deliciously fresh lunch.
Method
Step 1 of 4
Heat oil in a medium frying pan over medium-high heat. Add tofu and cook, turning, for 5 minutes or until browned. Transfer to a plate lined with paper towel.
Step 2 of 4
Meanwhile, to make the peanut dipping sauce, place peanut butter and soy sauce in a heatproof microwave-safe bowl. Microwave, uncovered, on high for 20 seconds or until peanut butter softens. Stir in remaining ingredients until smooth.
Step 3 of 4
Fill a large bowl with lukewarm water. Soak 1 rice paper sheet in water for 10 seconds, remove and place on a board. Top with a small amount of lettuce, cabbage, carrot, mint, tofu and peanuts. Roll, tucking in sides, to form a roll. Repeat with remaining rice paper and ingredients.
Step 4 of 4
Serve rice paper rolls with any remaining lettuce leaves, mint and peanut dipping sauce.
