Tuna Rice Paper Rolls

- 1 avocado, sliced
- 8 piece rice paper
- 8 snow peas, sliced
- 1 spring onion, sliced
- lettuce (to fill)
- 1 bunch broccolini
- 2tablespoons soy sauce
- 2teaspoons lime juice
- 95grams tuna in olive oil, drained
Method
Step 1 of 4
Pour boiling water into a shallow dish big enough to fit rice paper. Cool slightly.
Step 2 of 4
Meanwhile, blanch broccolini in a saucepan of boiling water until tender but still firm. Remove and cool slightly. Slice stalks lengthways.

To assemble rolls, dip 1 rice paper into the shallow dish, turning, until completely wet. Remove and lay on a flat surface. Place lettuce, avocado, spring onion, tuna, snow pea and broccolini across the round towards the bottom. Fold over bottom, to cover filling, and both sides in, then roll up tightly. Repeat with remaining rice paper and filling.

Combine sauce and juice in a bowl (see tip). Serve sauce with rolls.
