- 200grams rice noodles
- 1tablespoons sesame oil
- 1tablespoons sweet chilli sauce
- 1teaspoons Thai fish sauce
- 16 Vietnamese rice paper wrappers
- 1 bunch spring onions, finely sliced
- 1 fresh root ginger, peeled and grated, 1.5cm piece
- 1 clove garlic, finely sliced
- 1 red chilli, finely chopped
- 2tablespoons coriander, chopped
- 1tablespoons mint, chopped
- 1/4 cucumber, cut into fine matchsticks
- 2 cans crabmeat, drained
Method
Step 1 of 3
Cook the noodles according to the packet instructions. Drain, then refresh under cold running water.
Step 2 of 3
Mix together all the other ingredients, except the ricepaper wrappers, in a large bowl. Add the noodles and toss to mix. Cover and leave to stand for 10 minutes to allow the flavours to develop, then transfer to a serving dish.
Step 3 of 3
To serve, ricepapers with some of the crab and noodle mixture and roll up to eat, allowing 4 wraps per person.
