- 1teaspoons sesame oil
- 8 rice paper wrappers
- 1 large carrot, grated
- 2 sprigs coriander (to serve)
- 2 Lebanese cucumbers
- 1 handful iceberg lettuce, washed, torn
- 1 large avocado, peeled, seeded, sliced lengthwise
- 1tablespoons rice vinegar
- 2teaspoons sesame seeds, toasted
- 2tablespoons light soy sauce
- 16 sprigs chives
- 1teaspoons brown sugar
- 1 cup chicken, cooked, shredded
Method
Step 1 of 5
Halve cucumbers lengthwise and, using a teaspoon, scoop out seeds and discard. Cut into thin strips.
Step 2 of 5
Working with 1 sheet of rice paper at a time, dip into warm water for about 10 seconds, turning until it begins to soften. Drain excess water. Lay on a clean work surface.
Step 3 of 5
Place a few slices of avocado, carrot, cucumber, chicken, lettuce and 2 chives at one side of the wrapper.
Step 4 of 5
Fold base and sides of wrapper over filling and roll up firmly to enclose. Transfer to a plate and cover with a damp cloth. Repeat.
Step 5 of 5
For dipping sauce, combine remaining ingredients with 1/4 cup water and mix well. Serve rolls with coriander sprigs and sauce.
