  • 1/2 lemon, juiced
  • 2teaspoons Woolworths extra virgin olive oil
  • 1 cup cooked brown rice
  • 1/2 small red onion, finely chopped
  • 200grams Solanato tomatoes, halved
  • 1 Lebanese cucumber, halved lengthways, thinly sliced
  • 100grams snow peas, trimmed, thinly sliced lengthways
  • 1/2 bunch continental parsley, leaves picked, finely chopped
  • 1/2 cup pepitas, roughly chopped

Description

Pack this nutritionally approved brown rice salad for your next outdoor adventure with the kids. It's full of veg and flavoured with a zesty dressing.

Method

Step 1 of 2

Place lemon juice and oil in a large bowl and whisk to combine. Season with pepper. Add rice, onion, tomato, cucumber, snow peas, parsley and pepitas, then toss to combine.

Step 2 of 2

Divide rice salad among 2 airtight containers. Cover with lids and keep chilled until ready to serve.
