  • 1/4-1/2 cups cashews
  • 1 cup chicken stock
  • 1 carrot
  • 1/2 zucchini
  • 6-8 snow peas
  • 1 cup bean sprouts
  • 1 cup water chestnuts, young corn and onion
  • 1/4-1/2 cup beans
  • 1 cup cauliflower and broccoli
  • 1 cup broccoli
  • 1/2-1 cup cauliflower rice

Description

Vegetable packed meal with flavour.

Method

Step 1 of 6

Chop up all the vegetables. Try not to leave them too large as they don't cook fast enough and can make it too raw or soggy.

Step 2 of 6

Turn fry pan on to a medium heat. Add chicken stock and get some heat to it.

Step 3 of 6

Add cashews, carrots, cauliflower and broccoli. Stir up to mix and cover in stock.

Step 4 of 6

Give the last step about 30 seconds then add the rest of the ingredients except the cauliflower rice. Stir to mix up ingredients and get stock to spread over all ingredients.

Step 5 of 6

Cook for about 5 minutes and then add cauliflower rice and cook until veggies are all ready to eat. I usually test a piece of carrot or broccoli. Stir regularly to make sure it's not sticking or burning.

Step 6 of 6

Enjoy. If I have no one to share this with I stick the rest in the fridge to heat up the next day.
