  • 1 cup basil, leaves
  • 3 tomatoes, sliced
  • 1 large carrot, grated
  • 1 Lebanese cucumber
  • 1 butter lettuce, leaves (to serve)
  • 1 pinch salt (for seasoning)
  • 1 pinch pepper (for seasoning)
  • 2tablespoons low fat mayonnaise
  • 1/3 cup buttermilk
  • 4 veggie patties
  • 4 seeded bread rolls

Step 1 of 3

Cook the vegetable burgers following the packet instructions.

Step 2 of 3

Place buttermilk, mayonnaise and basil in a food processor and process until smooth. Season. Transfer to a jug.

Step 3 of 3

Place the base of each bread roll onto a serving plate. Top with lettuce, tomato, carrot and vegetable burger. Run a peeler along the length of the cucumber to form ribbons. Pile cucumber ribbons onto burgers and spoon over mayonnaise sauce. Add bread roll tops. Serve.
