Description

Homemade classic chocolate chip cookies with a vegan twist that keeps them chewy in the centre with crispy golden edges.

Method

Step 1 of 5

Preheat the oven to 160°C. Stir the chia seeds and water together in a bowl setting it aside to absorb the water for 5 minutes.

Step 2 of 5

Whisk the oat milk, vegan butter and soaked chia seeds together in a bowl.

Step 3 of 5

Combine the oat flour, bicarbonate of soda, granulated and brown sugar until fully incorporated. Add the dry ingredients into the wet ingredients along with the chocolate chips until it forms a dough.

Step 4 of 5

Line a baking tray with baking paper, divide the dough into 12 balls placing them onto the baking tray leaving a gap between each ball of dough. Add the cookie dough to the fridge to chill for 30 minutes.

Step 5 of 5

Add the baking tray to the oven, bake for 10-12 minutes until the edges are golden brown. Let the cookies cool on the baking tray for 10 minutes before taking a bite.
