- 500grams pork mince
- 2tablespoons smooth peanut butter
- 2tablespoons sweet chilli sauce
- 2tablespoons soy sauce (plus extra to serve)
- 1/3 cup cornflour
- 200grams fresh udon noodles
- 1/2 bunch spring onions, thinly sliced
- 1/3 cup sesame oil
- 1 red chilli, deseeded, deseeded, finely chopped

Description
What can you make with pork, peanut butter, sweet chilli sauce, soy sauce and udon noodles? Udon fritters of course! Ready in four steps, it's the ultimate snack.
Method
Step 1 of 4
Place mince in a large bowl. Using hands, mix in one direction until sticky. Add peanut butter, sauces and cornflour, then mix until combined.
Step 2 of 4
Roughly cut noodles with kitchen scissors, then add to bowl with half of the onion and mix until just combined. Using wet hands, shape 2 tbs mixture into a fritter. Repeat with remaining mixture to make a total of 20 fritters.
Step 3 of 4
Heat 1 tbs oil in a large frying pan over medium heat. Add 5 fritters to pan and cook for 2 minutes on each side or until golden and cooked through. Transfer to a wire rack set over a baking tray. Cover to keep warm. Repeat with remaining oil and fritters.
Step 4 of 4
Stir half of the chilli through the extra soy sauce. Sprinkle remaining chilli and onion over fritters, and serve with soy sauce mixture.
