  • 1/2 cup walnuts, finely chopped
  • 1/2 cup unsalted pistachio kernels, finely chopped
  • 2tablespoons brown sugar
  • 1 orange, zested
  • 60grams unsalted butter, softened
  • 1tablespoons icing sugar mixture, for dusting
  • 1/2 cup smooth ricotta
  • 2tablespoons honey

Description

Woolworths all-butter croissants are the base of this delicious brunch-time dish. Stuffed with nuts and topped with a creamy ricotta mixture, they're a shortcut to a cafe favourite at home.

Method

Step 1 of 3

Preheat oven to 200°C/180°C fan-forced. Line a large baking tray with baking paper. Cut each croissant in half horizontally to open, taking care not to cut all the way through. Transfer to prepared tray and bake for 5 minutes.

Meanwhile, combine walnuts, pistachios, sugar, orange zest and butter in a small bowl.

Step 3 of 3

Remove croissants from oven and fill each croissant with 2 tbs nut mixture. Spoon remaining nut mixture on top. Return tray to oven and bake croissants for a further 8 minutes or until toasted and golden. Dust croissants with icing sugar, then top with ricotta and drizzle with honey. Serve warm.
