  • 1 1/2tablespoons drained baby capers
  • 200grams punnet Solanato tomatoes, halved
  • 220grams pitted Kalamata olives, drained
  • 1tablespoons lemon juice
  • 1teaspoons basil leaves (to serve)

Method

Step 1 of 3

Cook pasta in a large saucepan of boiling, salted water according to packet instructions. Drain, reserving 1/4 cup cooking liquid.

Step 2 of 3

Meanwhile, heat tuna oil in a large, deep frying pan over medium-high heat. Cook garlic, capsicums and capers, stirring, for 5 minutes or until capsicums have softened.

Step 3 of 3

Add tomato and olives, then cook for 2 minutes or until warmed through. Add pasta, reserved cooking liquid, lemon juice and tuna, then toss to combine. Season with pepper and serve topped with basil.
