Traditional Pumpkin Scones

- 90grams butter
- 1/4 cup sugar
- 1 cup cooked mashed pumpkin (pumpkin should be well cooled before adding)
- 1 egg
- 1/2 cup milk
- 3 cup SR flour
Description
This recipe uses the creaming method. The way my Grandma always made them.
Method
Step 1 of 11
Beat butter on low speed until soft.
Step 2 of 11
Add sugar and beat well on medium speed.
Step 3 of 11
Mix through pumpkin and egg. Mix until well combined. (It doesn't matter if the batter has small lumps, this helps with the finished scone)

Add milk and mix through.
Step 5 of 11
Add flour and mix gently. (I usually use a wooden spoon or spatula at this point to avoid overmixing and making the dough tough)

Turn onto a floured surface and knead lightly. (Once again taking care not to overwork the dough).

Gently press the dough to about 3 cm thick and cut out with scone cutter (about 5 or 6 cm) or glass dipped in flour.

Place on tray lined with baking paper and bake for 15 mins. Check, and if required, cook for another few mins.

Preheat oven to 200C.

When cooked, remove from tray and place into a tea towel on a cooling rack. Wrap scones in tea towel until cool. Or allow to cool for ten minutes and consume.

Store in airtight container for a few days, or freeze until required.
