  • 1 tomato, chopped
  • 1/2 bunch coriander, plus extra to garnish
  • 1/2 red onion, finely diced
  • 5milliliter olive oil spray
  • 1 lime, juiced
  • 400grams black beans, rinsed and drained
  • 4 tortillas, cut into triangles

Method

Step 1 of 3

Preheat oven to 180°C. Line two baking trays with baking paper.

Step 2 of 3

Combine avocado, onion, tomato, lime juice, black beans and coriander in a bowl. Season to taste. Sprinkle with extra coriander to garnish.

Step 3 of 3

Spread out tortilla triangles on prepared trays and spray with oil. Bake for 8 minutes or until crispy. Serve with black bean guacamole.
