  • 1 Lebanese cucumber, halved lengthways, thickly sliced
  • 1/2 bunch red radishes, cut into matchsticks
  • 5milliliter virgin olive oil spray
  • 2teaspoons ground paprika
  • 1 lemon, juiced
  • 200grams tzatziki dip
  • 1 punnet medley tomatoes, halved
  • 1 punnet truss tomatoes, halved
  • 160grams baby spinach leaves, trimmed
  • 1tablespoons olive oil
  • 1/4 cup dill, sprigs (to garnish)
  • 2 pita breads

Method

Step 1 of 3

Preheat oven to 200°C. Line a baking tray with baking paper. Tear bread into large pieces and place on tray. Spray with oil and sprinkle with paprika. Bake for 8-10 minutes or until crisp. Set aside to cool.

Meanwhile, transfer tzatziki dip to a small bowl. Add lemon juice and oil and stir well.

Step 3 of 3

Toss together tomato, cucumber, radish, spinach and toasted bread in a large bowl. Season with ground black pepper. Garnish with dill. Serve with the tzatziki to drizzle over.
