- 1 medium lime, juiced
- 4tablespoons fish sauce
- 2tablespoons peanut oil
- 1teaspoons sugar
- 1 medium Thai chillies, thinly sliced
- 400grams coleslaw mix, ready-made
- 1 medium cucumber, julienne
- 1/4 medium red onion, peeled, julienne
- 4 sprigs mint, leaves picked
- 6 sprigs coriander, leaves picked
- 4 sprigs thai basil, leaves picked
- 200grams rotisserie chicken, diced
- 75grams salted cashews, roasted
Description
Break out the chopsticks for this fragrant Thai style salad that's so tasty you'll make it over and over again.
Method
Step 1 of 3
Whisk the lime juice, fish sauce, peanut oil, sugar and Thai chillies together in a bowl.
Step 2 of 3
Combine the coleslaw mix, cucumber, red onion, herbs and chicken in a mixing bowl, toss together with the dressing to coat.
Step 3 of 3
Place into serving or salad bowls topped with roasted cashews to finish.
