  • 60grams peanuts, roasted and coarsely chopped
  • 50grams basil, coarsely chopped
  • 1 cucumber, peeled, deseeded and cut into strips
  • 150grams mixed greens, chopped

Description

Filled with bold and punchy flavours of limes, sweet chilli sauce and fish sauce, this fiery salad makes a perfect appetiser.

Method

Step 1 of 2

In a small bowl, mix the 2 teaspoons of lime zest, the lime juice, fish sauce and sweet chilli sauce. Set aside.

Step 2 of 2

In a salad bowl, toss all the ingredients except half of the peanuts and some prawns. Add 3 tablespoons of dressing to coat. Garnish with the remaining prawns and peanuts.
