Thai-Flavoured Chicken Drumsticks

- 1tablespoons fish sauce
- 1 small red chilli
- 1 bunch coriander
- 1 Lebanese cucumber
- 1/4 cup lime juiced
- 1/2 cup sweet chilli sauce
- 1 cup jasmine rice
- 12 chicken drumsticks
Method
Step 1 of 11
Preheat oven to 200°C.

Combine sweet chilli sauce, lime juice and fish sauce in a jug.
Step 3 of 11
Finely chop 3cm of stalk and roots of coriander and add to the mixture. Reserve coriander sprigs in a bowl, cover and refrigerate until required.

Line a roasting pan with baking paper. Put 12 chicken drumsticks into pan in a single layer.
Step 5 of 11
Pour over sauce mixture, turning to coat well. Cover loosely with foil. Roast for 25 minutes.

Put 1 cup of jasmine rice into a saucepan with 2 cups of water. Place over high heat and cook until holes start to form in rice. Reduce heat to low, cover and cook for 5 minutes.

Meanwhile, Remove foil and cook for a further 10 minutes or until drumsticks are golden and cooked through.

Remove from heat and stand for 10 minutes. Fluff rice with a fork.

Using a vegetable peeler, run along length of one lebanese cucumber forming ribbons.

Chop one small red chilli.

Serve chicken with rice, cucumber and chilli.
