- 1tablespoons salt
- 2tablespoons vegetable oil
- 1 lemon, cut into wedges (to serve)
- 8 chicken drumsticks
- 2tablespoons plain flour
- 1tablespoons cracked black pepper
- 3 fresh hot red chillies, deseeded and sliced into strips lengthways
- 1 bunch spring onions, sliced on the diagonal

Preheat the oven to 200°C (Gas 6). Lay the chicken drumsticks in a bamboo steamer basket (or use a colander if you don’t have a steamer basket). Position over a pan of boiling water, cover, and steam for 10-15 minutes. Remove the chicken from the pan, and leave to cool slightly.

In a bowl, mix together the flour, salt, and cracked black pepper. Use to coat the chicken. Sit the drumsticks in a roasting tin with a little of the vegetable oil, and cook for 10-15 minutes until completely crispy and golden.

Meanwhile, heat 1 tablespoon of vegetable oil in a wok or frying pan over a high heat. Add the chillies and spring onions, and cook for about 5 minutes, or until they begin to crisp. Remove with a slotted spoon, and set aside on a piece of kitchen paper. Serve sprinkled over the piping-hot drumsticks, with lemon wedges for squeezing over.
