- 4 barramundi fillets, skin off
- 1 cm piece ginger, finely diced
- 100grams snow peas, tailed and shredded
- 250grams cherry tomatoes, halved
- 1 seeds and grains sourdough loaf, sliced
- 1 thai style salad kit
- 2 cloves garlic, crushed

Step 1 of 3
Preheat oven to 180°C and line a baking tray with baking paper.
Step 2 of 3
Rub ginger and garlic into fish, place on prepared tray and bake for 15 minutes or until cooked through. Flake using two forks.
Step 3 of 3
Place Thai salad on top of sourdough slices and top with snow peas, barramundi and tomatoes to serve. Note: The dressing provided with this product is not required for this recipe. Refrigerate it and use it for another salad within its use-by date range.
