- 115grams raw salmon, skin off, cut into cubes
- 1 cup cherry tomatoes, halved
- 1 Lebanese wholemeal bread
- 1 lemon, wedges (to serve)
- 3/4 cup reduced fat ricotta
- 1 cup Mixed Leaf baby spinach & rocket
- 2tablespoons thyme
- 40grams light tasty shredded cheese
- 1/2 avocado

Description
Turn to this salmon pizza for a fresh take on toppings. Rocket, salmon, avocado and lemon combine with cheese on slices that will have your tastebuds delighted.
Method
Step 1 of 3
Preheat the oven to 180°C. Line a baking tray with baking paper.
Step 2 of 3
Place bread on baking tray and spread with ricotta. Sprinkle over half the spinach and rocket, cheese and salmon. Bake for 8 minutes or until cheese has melted and salmon is just cooked through.
Step 3 of 3
Meanwhile, place tomato, avocado and remaining baby spinach and rocket into serving bowls. Sprinkle cooked pizza with thyme and season with pepper. To serve, allow people to dress their own pizza slices with the extra toppings and a squeeze of lemon juice.
