For the dressing
  • 4 medium spring onions, chopped
  • 2tablespoons teriyaki sauce
  • 2tablespoons soy sauce (reduced salt)
  • 2 medium limes, juiced
  • 225grams jasmine rice
  • 2teaspoons canola oil
  • 400grams sirloin steak, trimmed of fat
  • 2 medium carrots, chopped into matchsticks
  • 100grams red cabbage, shredded
  • 100grams white cabbage, shredded
  • 4tablespoons coriander, fresh, chopped, divided
  • 2tablespoons sesame seeds
  • 1 medium green chilli, sliced

Description

This simple beef teriyaki bowl is quicker than a takeaway with plenty of veggies and a lightened up teriyaki glaze.

Method

Step 1 of 5

Cook the rice according to pack instructions, drain and set aside.

Step 2 of 5

Heat a griddle pan until smoking and brush the steaks with the oil. Fry for 3 minutes on each side for medium. Remove from the pan and rest for 5 minutes, then cut into thin slices.

Step 3 of 5

Whisk the teriyaki sauce with the soy sauce and lime juice. The sauce should be tart and drizzling consistency.

Step 4 of 5

Add the vegetables and half the coriander to a large bowl and pour over half the dressing. Toss well to coat.

Step 5 of 5

Divide the rice between 4 bowls, add the vegetable mix on top, followed by sliced steak. Drizzle over the remaining dressing, top with sesame seeds, sliced green chilli and chopped coriander and serve.
