For the dressing
- 2 medium lime, juiced and zested
- 3tablespoons toasted sesame oil
- 2tablespoons soy sauce, reduced salt
- 1 large green chilli, finely sliced
- 2teaspoons canola oil
- 4 medium tuna steaks
- 500grams wholegrain rice, 2 packs of 250g each, ready cooked
- 200grams edamame, frozen
- 100grams spinach
- 2 large avocado, halved and cut into cubes
- 1 large mango
- 150grams cucumber, finely sliced
Description
Quickly seared tuna steak, ready cooked rice and a simple zingy dressing make this a quick and easy lunch or dinner.
Method
Step 1 of 4
Bring a pan of water to the boil and cook the edamame for 5 minutes. Drain and set aside. Heat the rice according to pack instructions, pour into a bowl and fluff with a fork.
Step 2 of 4
Heat a large griddle pan until smoking hot, brush the tuna steaks on each side with oil and cook for 2 minutes on each side for medium. Set aside to rest.
Step 3 of 4
Whisk the lime juice and half the zest, sesame oil, soy sauce and green chilli together in a small bowl.
Step 4 of 4
Divide the rice between 4 bowls and in separate sections add the edamame, spinach, mango, avocado and cucumber. Top the rice with sliced tuna steak, drizzle over the dressing and serve.
