  • 225grams Yumi's Classic Falafel
  • 1/4 cup hulled tahini
  • 1 clove garlic, crushed
  • 1/2 lemon, juiced
  • 1/4 red cabbage, shredded
  • 1/2packets mixed salad leaves
  • 1 avocado, sliced
  • 1 carrot, peeled into ribbons
  • 200grams frozen edamame salad, blanched
  • 1/4 bunch continental parsley, leaves picked

Description

This Mediterranean-inspired poke bowl is full of vegetables and colours. Topped with falafel and a drizzle of dressing, it makes a perfect easy lunch or dinner.

Method

Step 1 of 3

Preheat oven to 180°C/160°C fan-forced. Place falafel on a tray lined with baking paper. Cook falafel for 5-8 minutes or until heated through.

Step 2 of 3

Meanwhile, combine tahini, garlic, lemon juice and 1/4 cup water in a small bowl.

Step 3 of 3

Arrange cabbage, salad leaves, avocado, carrot and edamame in serving bowls. Top with falafel and drizzle with dressing. Season with pepper. Serve.
