Strawberry Bark

- 1 punnet strawberries (or a mix of strawberries and raspberries), finely sliced
- 1/4 cup raw pistachio slivers (bright green)
- 1/2 cup crispy rice pops
- 220grams white chocolate, broken into small pieces
- 2 tbls coconut oil
Description
The evolution of the date bark trend, but more Christmassy and a great food gift to contribute to celebrations.
Method
Step 1 of 5
Line a shallow baking tray with grease proof paper. Finely slice the berries and lay them evenly all over the tray without overlapping them and leaving some small gaps in between.
Step 2 of 5
Scatter the pistachios in the gaps and then sprinkle crispy rice pops over the top.
Step 3 of 5
Melt the white chocolate together with the coconut oil in 20 second bursts in the microwave, stirring in between, until smooth.
Step 4 of 5
Pour the melted chocolate over the top of the berries to completely cover in a thin layer and place the tray in the freezer for a minimum 1 hour to set and freeze.
Step 5 of 5
When ready to serve, remove the tray from the freezer, peel the ‘bark’ off the paper and break into wedges to serve.
Instruction tip
Give a little something:If gifting, break into wedges and place into food safe cellophane bags and keep chilled.
