- 60grams butter
- 1 1/2teaspoons peppermint essence
- 125grams white chocolate, melted
- 200grams white marshmallows, chopped
- 2 cup caster sugar
- 350grams white chocolate melts
- 150milliliter sweetened condensed milk

Method
Step 1 of 3
Grease and line a 18x28cm shallow pan with baking paper. Place milk, butter, sugar and 1/4 cup water into a medium pan over low heat. Stir until sugar has dissolved. Increase heat to medium and boil gently for about 10 minutes or until mixture reaches soft ball stage and temperature reaches 230°C on a sugar thermometer.

Remove from heat and immediately stir in essence, chocolate and marshmallows. Stir with a wooden spoon until melted and smooth. Quickly pour into pan and smooth surface. Refrigerate until set.
Step 3 of 3
Remove from fridge and leave at room temperature for 5 minutes before cutting. Cut into squares or use a heart shaped cutter. To decorate, colour the white chocolate with 1-2 drops of food colour. Transfer to a small piping bag. Pipe on your love messages.
