Brownie
- 400grams dark chocolate , chopped
- 280grams butter
- 350grams demerara sugar
- 6 eggs
- 150grams plain flour
Gingerbread
- 1packets Dollar Sweets Christmas Sprinkles
- 1packets Dollar Sweets Gingerbread Cookie Decorating Kit
- 120grams butter
- 100grams caster sugar
- 2 eggs, yolks only
- 1tablespoons blackstrip molasses
- 280grams plain flour
- 1teaspoons baking powder
- 1/2teaspoons bicarbonate soda
- 2teaspoons cinnamon, ground
- 1teaspoons ginger, ground
- 1teaspoons mixed spice
- 1 pinch salt
Method
Step 1 of 6
Preheat a fan forced oven to 160ºC. Lightly grease a 20cm x 30cm baking tin and line with baking paper.

To make the gingerbread people, in a large bowl cream the butter and sugar until pale but not fluffy. Add the egg yolks and the golden syrup and mix well.

In another bowl, combine the dry ingredients. Add to the butter mixture and mix well with a wooden spoon until it forms a uniform dough. Roll into a ball, cover with plastic film and allow to rest in the fridge for at least one hour.

Place the ball of dough on a lightly floured bench and, using a lightly floured rolling pin, roll out the dough to 4mm thickness. Use the gingerbread person cutter from the Dollar Sweets Gingerbread Cookie Decorating Kit to cut 6 gingerbread people from the dough. Set aside.

To make the brownie mix, combine half the chocolate and butter in a small saucepan over low heat and stir until melted and smooth. Allow to cool slightly. Place the sugar, eggs and flour in a bowl with the chocolate mixture and mix to combine. Stir through the remaining chocolate pieces and pour the mixture into the baking tin.

Arrange the gingerbread people on top of the brownie batter and bake for 30–35 minutes or until the centre of the brownie is just set to the touch. Allow to cool in the tin, then gently remove from the tin and decorate using the icing and sprinkles from Dollar Sweets Gingerbread Cookie Decorating Kit and Dollar Sweets Christmas Sprinkles. Slice and serve.
