- 1/2teaspoons ground cinnamon
- 2/3 cup self-raising flour
- 1/2teaspoons baking powder
- 1/3 cup brown sugar
- 3 fresh Medjool pitted dates, finely chopped
- 2 free range eggs
- 1/2teaspoons vanilla extract
- 1/3 cup milk
- 2tablespoons vegetable oil
- 2tablespoons double thick cream
- 2tablespoons caramel spread
Description
Turn your favourite dessert into a convenient microwaveable mug treat. Topped with thickened cream and gooey caramel spread, these sticky-date cakes will certainly impress.
Method
Step 1 of 2
Grease two 1 3/4-cup-capacity microwave-safe mugs. Reserve 1 pinch of cinnamon. Place flour, baking powder, sugar, dates and remaining cinnamon in a bowl. Stir to combine. Add eggs, vanilla, milk and oil. Stir until well combined.
Step 2 of 2
Divide mixture between prepared mugs. Microwave on high for 1 minute 20 seconds, or until cake has risen and cakes spring back when gently pressed. Serve topped with cream, caramel spread and a sprinkle of reserved cinnamon.
