- 225grams cream cheese, softened
- 600milliliter thickened cream
- 1/4 cup icing sugar mixture
- 2teaspoons vanilla extract
- 375grams plain chocolate wheat biscuits
- 46grams miniature chocolate sandwich cookies
Description
Does it get much simpler than a fridge cake? Surely not. No one needs to know that this recipe has only four steps and six ingredients. Shh.
Method
Step 1 of 4
Using a pencil, mark a 10x20cm rectangle on a piece of baking paper. Line a baking tray with prepared paper, marked-side down. Using an electric mixer, beat cream cheese and 400ml thickened cream in a large bowl until soft peaks form. Sift icing sugar mixture into the bowl, add vanilla extract and beat until firm peaks form.
Step 2 of 4
Spread 1 cup cream-cheese mixture over prepared tray. Arrange 6 biscuits, in three rows of 2, over cream. Spread tops of biscuits with a little remaining cream, then top with another biscuit. Continue layering with biscuits and some of the remaining cream, finishing with cream-cheese mixture.
Step 3 of 4
Spread remaining cream-cheese mixture over top and sides of biscuit stack to cover. Cover, then place in the fridge for 6 hours or overnight to allow biscuits to soften.
Step 4 of 4
Using an electric mixer, beat remaining cream in a large bowl until firm peaks form. Spread cream over top of cake. Finely chop 2 miniature cookies, then arrange remaining miniature cookies over top of cake to decorate. Serve sprinkled with biscuit crumbs.
