Description
Filled with sweet, chewy dates, these crowd-pleasing date biscuits taste as good as they look and are perfect for entertaining.
Method
Step 1 of 5
Preheat an oven to 180°C/160°C fan-forced. Line 2 large baking trays with baking paper. Combine flours, baking powder and 2/3 cup of the icing sugar in a large bowl.
Step 2 of 5
Place milk and butter in a microwave-safe jug and microwave on high for 2 minutes or until butter melts. Cool slightly, then stir in the yeast until combined.
Step 3 of 5
Add milk mixture, ⅓ cup water and rosewater to the flour mixture and stir until the ingredients just come together. Briefly knead until smooth. Divide dough into 24 balls. Roll each portion into a ball.
Step 4 of 5
Place dates in the bowl of a food processor with ¼ cup water. Process until almost smooth. For each biscuit, using slightly damp hands, flatten a dough portion slightly and top with 1 tsp of date mixture, then shape and roll dough to enclose the date mixture and form a ball. Place biscuit on prepared tray. Repeat with remaining dough portions and date mixture to make 24 biscuits in total. Bake biscuits for 12 minutes or until very lightly browned. Remove from oven. Allow to cool completely on trays.
Step 5 of 5
Place remaining icing sugar on a flat plate. Roll biscuits in remaining 2/3 cup icing sugar. Serve.
