- 1 small carrot
- 1 zucchini
- 2tablespoons hummus
- 50grams kale leaf & spinach
- 2teaspoons olive oil
- 125grams porterhouse steak
- 1 small sweet potato
- 1 clove garlic, crushed

Method
Step 1 of 3
Preheat oven to 200°C. Line a baking tray with baking paper. Cut sweet potato into wedges and place onto tray. Drizzle with half the oil and season to taste. Bake for 20 minutes or until golden and tender.

Meanwhile, rub remaining oil over both sides of steak and season with pepper and garlic. Heat a frying pan over high heat. Add steak and cook for 2-3 mins each side until cooked to your liking. Remove from pan and rest for a few minutes before slicing.
Step 3 of 3
Using a vegetable peeler, shave zucchini and carrot into thin ribbons. Arrange sweet potato wedges, steak, greens, zucchini and carrot into a bowl. Top with hummus.
